<p>2 chicken breasts</p>



<p><br><strong>Marinade</strong></p>



<p>1 tbsp brown sugar</p>



<p>3 tbsp peanut butter</p>



<p>1 large tsp curry powder</p>



<p>1 tbsp plain yoghurt</p>



<p>1 tsp soy sauce</p>



<p>1 tbsp vegetable oil</p>



<p><br><strong>Dip</strong></p>



<p>1 tbsp water</p>



<p>1 tbsp peanut butter</p>



<p>1 tsp curry powder</p>



<p>1 tbsp plain yoghurt</p>



<p>1 tsp rice wine vinegar</p>

<h3>Method</h3>



<p>In a large bowl, mix all the marinade ingredients together. Stir well so the mixture is smooth.</p>



<p>Cut the chicken into chunks and add to the same bowl. Mix well so the chicken is evenly coated. </p>



<p>Cover and leave the mixture to marinade for 30 minutes. </p>



<p>If using wooden skewers, soak them in water so they don&#8217;t burn under the grill.</p>



<p>Meanwhile, in a new bowl combine all the ingredients for the dip. Mix until smooth. Season to taste and leave to one side.</p>



<p>Pre-heat the grill. Thread the chicken onto the skewers and grill on all sides for 10-15 minutes.</p>



<p>Serve with the peanut dip and a fiery thai salad or noodles.</p>
