Chicken Satay with Peanut Dip

This is one of my favourite chicken recipes and one from childhood that has evolved over the years. It goes well with spicy noodles or rice but I enjoy it most with a fiery Thai salad.

Ingredients

2 chicken breasts


Marinade

1 tbsp brown sugar

3 tbsp peanut butter

1 large tsp curry powder

1 tbsp plain yoghurt

1 tsp soy sauce

1 tbsp vegetable oil


Dip

1 tbsp water

1 tbsp peanut butter

1 tsp curry powder

1 tbsp plain yoghurt

1 tsp rice wine vinegar

Method

In a large bowl, mix all the marinade ingredients together. Stir well so the mixture is smooth.

Cut the chicken into chunks and add to the same bowl. Mix well so the chicken is evenly coated.

Cover and leave the mixture to marinade for 30 minutes.

If using wooden skewers, soak them in water so they don't burn under the grill.

Meanwhile, in a new bowl combine all the ingredients for the dip. Mix until smooth. Season to taste and leave to one side.

Pre-heat the grill. Thread the chicken onto the skewers and grill on all sides for 10-15 minutes.

Serve with the peanut dip and a fiery thai salad or noodles.
